Prawn & Pomegranate Salad

A super easy and super fast dish that can be mixed and matched with what is in the fridge.


Ingredients

Spinach (baby) or rocket /salad leaves
Prawns
Pomegranate Seeds
Cucumber Balls 
Mango Balls
Avocado Balls
Chickpea (look up the dried spiced chickpea recipe under our stuffed pepper recipe)

 

Method
Literally make a salad with the ingredients and squeeze lime over the top.

Bursting with protein, vitamins and minerals – literally goodness on a plate.

Vegetarian & Vegan Alternatives

Remove the prawns – there is protein in the chickpeas although you may want to sprinkle in some quinoa to add in more protein (chickpeas are not a complete protein and vegetarians could always add in some egg.
