Stuffed Mushrooms

Another versatile option for entertaining, happy lunching, nibbling from the fridge or made into a full meal.

Ingredients (per serving)

4 Chestnut Mushrooms
Handful Spinach 
2 Slices Chopped Red Onion
2 Tablespoons Feta Cheese
2 Baby Tomatoes (cut in half)
Pataks Madras Curry Paste


Roast the mushrooms in 180 degrees oven (160 degrees (fan) until cooked (approximatively 10 mins).
Stir-fry spinach, onion and tomatoes with the curry paste – once soft stuff the mushrooms and crumble the feta on top.
This can be served with salad, alongside curry burgers (recipe in our Re-Vitalise Your Eating Book) or as part of a tapas style small plates meal.
