Trout, Beetroot, Strawberry & Balsamic Skewer

Get a new take on snacks/canapes/starters by using skewers – it’s pretty, doesn’t take long and they are a joy to eat. I use re-usable skewers so not a problem for the environment.


Ingredients

Smoked Trout (protein & good fat)
Sliced Beetroot (high in folate rich B9 – good for heart disease & stroke prevention)
Strawberry (fabulous source of vitamins and fibre)

 

Optional
Grated Parmesan (rich in vitamins and minerals including calcium and B12)
Balsamic Vinegar (use the good stuff – amongst many benefits it can help lower blood pressure and cholesterol - but watch out for sulphite allergy)

Method
Skewer individual pieces onto a cocktail stick

To Serve
For fridge storage stand upright in a tub/bowl and for presentation rest across top of a shot glass.

Drizzle Parmesan & Balsamic Vinegar over just before serving.

Tips

This can be done with all sorts of ingredients – think about a protein, veg/fruit (good carb) and the addition of a good fat such as  avocado, cheese or an olive oil dressing.
Vegetarian or vegan alternatives.
Halloumi instead of fish.
Chickpea balls
